Vinification
Soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees. Daily temperature controls during fermentation. The vinification takes place for 20% in oak barrels and 80% in stainless steel vats. Fermentation in indigenous yeasts. Aging: The wine is aged on lees for 8 to 12 months then bottled. Certification : Certified organic by Ecocert
