Complete analysis of each cuvée upon the reception of the grapes. Soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees. Daily temperature controls during fermentation. In this cuvée, the production of young and old vines of Premier Cru Les Vaillons are blended.
