of sandstone and shale at 400m altitude
Vinification
Harvest by hand in 15kg boxes. The grapes are destemmed and crushed. Each grape variety is vinified separately. The vinification is done in thermo-regulated stainless steel vats. Cuvaison for 2 to 3 weeks with gentle work by pumping over and punching down. Selection of «coule» wine only without pressing marc. Aging: Aging for 10 to 11 months 60% in tank and 30% in barrels from 2 to 5 wines and 10% in new barrels. Racking, blending and bottling in favorable lunar phase. Aging potential: 8 to 10 y
