Vinification
Harvest by hand. Fermentation with indigenous yeasts. Manual pumping over. The maceration lasts during the entire fermentation between 10 to 15 days. Aging: Aging for 18 months in oak barrels. No filtration. Aging potential: 5 to 15 years Certification : Organic wine certified by Suolo e Salute
