Pressing in a pneumatic press. Fermentation in stainless steel vats stopped by cold with 22.5 g / l sugar. Sparkling method made with the natural sugar of its grapes. First disgorging from 24 months on slats then disgorging as and when required . No dosage at disgorging. All the work in the cellar aims to preserve the expression of our terroirs in the wines as best as possible.
