Vinification
Complete analysis of each cuvée upon the reception of the grapes. Soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees. Daily temperature controls during fermentation. The vinification is made enterely in stainless steel vats to preserve the freshness and typicity. Aging: This wine is aged on lees for 8 months with regular pumping over to refine its structure. Certification : Certified organic by Ecocert
