Vinification
Soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees. The vinification is done entirely in stainless steel vats to preserve the freshness and typicity. Aging: Aging on lees for 8 to 12 months with pumping over more or less frequent during the first months to refine its structure. The wine is the bottled by us. Certification : Certified organic by Ecocert
