Vinification
Complete analysis of each cuvée upon the reception of the grapes. Soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees. Daily temperature controls during fermentation. Vinification exclusivery in 1 to 5 wines oak barrels with regular batonnage. It allows to work on the lees and round off the wine without letting the woody aromas take over. Aging: The wine is bottled after slight filtration after aging for around 12 months.
