All the work in the cellar aims to preserve the expression of our terroirs in the wines as much as possible. After a meticulous sorting of the grapes in the vineyard, often with multiple passages, a slow pressing lasting an average of 7 hours of the whole bunches is carried out for the white wines. For Pinot Noir, the grapes are destemmed and then macerated for about 15 days. Fermentations start spontaneously and end after one to several months. Aging: After a long aging on lees in cask or stain
