Vinification
Complete analysis of each cuvée upon the reception of the grapes. Soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees. Daily temperature controls during fermentation. Selected on the oldest parcel, this cuvée is partially vinified in oak barrels. Half of the wine ferments in barrels and remains in barrel for 12 months on fine lees with regular batonnage. The other half is vinified in stainless steel vats.
