Vinification
Intense disbudding to control the yield. Harvest by hand then strict sorting at the parcel then in the cellar to keep only the most healthy and beautiful grapes. Cold pre-fermentation maceration for a few days. Fermentation with daily puming over during 15 days. Fermentation with indigenous yeasts. Aging: After devatting, the wine is aged in barrels (25 to 30% of new oak) for around 12 months then blended.
