Vinification
Complete analysis of each cuvée upon the reception of the grapes. Soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees. Daily temperature controls during fermentation. This cuvée is vinified so as to extract the maximum of the terroir's potential. Fermentation and aging take place in oak barrels for 25 % of the production with regular batonnage for 10 months.
