Vinification
Harvest by hand. Complete analysis of each cuvée upon the reception of the grapes. Soft and slow pressing to extract the best juices. Slow alcoholic fermentation at 20°C on fine lees. Daily temperature control during fermentation. Fermentation and aging takes place in 1 to 5 wines oak barrels with more or less frequent batonnage depending on the vintage.
