Vinification
Intense disbudding to control the yield. Harvest by hand then strict sorting at the parcel then in the cellar to keep only the most healthy and beautiful grapes. Complete analysis of each cuvée upon the reception of the grapes. Cold pre-fermentation maceration for a few days. Fermentation with daily puming over during 15 days. Aging: After devatting, the wine is aged in barrels ( 1/3 are new) during 18 months. The wine is then bottled after a very slight filtration, a slight deposit may therefor
