Vinification
Manual harvest. Slow pressing of whole grapes in pneumatic press for 8 to 10 hours. Vinification maintained at 15 - 22 ° C in stainless steel vats with indigenous yeasts. Aging on lees for 10 months. All the work in the cellar aims to preserve the expression of our terroirs in the wines as much as possible. After a meticulous sorting of the grapes in the vineyard, often with multiple passages, a slow pressing lasting an average of 7 hours of the whole bunches is carried out for the white wines.
