Vinification
Harvest by hand at maturity in October. 100% destemming and light crushing before being placed in tank. Cold maceration during 48 hours. Alcoholic fermentation (indigenous yeasts) during 11 days at maximum temperature of 30°C. Maceration/extraction over 3 weeks with malolactic transformation in tank before the first blend and barelling in December 2014. Aging: Aging for 24 months in new barrels (French oak), final blend and bottling in December 2016. Aging potential: Until 15 years Certification

24 mois en barriques neuves de chêne français ; assemblage final et mise en bouteille en décembre 2016.
