Vinification
Indigenous yeast. Between 20% to 40% of the harvest is not destemmed. Vinification in concrete vats during 4 to 5 weeks. Aging: Aging is carried out in demi-muids from 18 to 24 months. Aging potential: 10 to 20 years 2016 is without any doubt one of the greatest vintages of the appellation since 1998. The wines are powerful, elegant, well balanced and also have a great freshness.
