Champagne is first and foremost a region of tension. The chalky soil, the northern climate, and the slow ripening process give the grapes a natural acidity that the winemaker's work must complement without harshening it. When the wine is just right, the bubbles are not an artifice: they prolong the sensation of stone, white fruit, citrus, dried flowers, and fresh bread.

In a sommelier's interpretation, Champagne is chosen as much for its intended use as for its appellation. A precise Blanc de Blancs opens a meal with an almost saline clarity. A more vinous blend complements poultry, a creamy fish dish, or a mature cheese. A rosé de saignée speaks more of fruit, texture, and gastronomy than of being a simple aperitif.
